Grown in the WuYi Moutains, where the terrain is complex and uneven, the plucking of Shui Xian can only done by hand. It then undergoes a complex roasting process that can take several days. This process is not only labor intensive, it also requires skill and a lot of time, thereby making Shui Xian a luxury tea often reserved only for special occasions. Due to its value and price, it is also sometimes chosen as a gifts for family, friends or special guests.

Water Temperature:
Use boiling water 95–100°C (near boiling)

Steeping Time:
After a quick 5-second rinse, begin with a 10–12 second first infusion, continue with 12–20 second steeps for the next few rounds, then gradually extend to 25–40 seconds as the leaves unfurl and release deeper mineral notes.

Multiple Infusion:
Can be re-steeped multiple times, often 6-7 infusions or more, depending on the tea’s quality and your brewing method
